Wine Making at SomerVille
The wine making is an annual tradition at SomerVille .
Wine bottling photos and
wine making photos are
available. In 2004, 700 bottles were produced followed by 1200
bottles in 2005. We see this as an excellent example of a community based
initiative which, if someone chooses, can become a profitable SomerVille
based enterprise.
Not only do we produce our
own high quality (confirmed by many) organic wine at a low cost, it is a
great opportunity to have some fun and get engaged in a not to be missed
community event. Wine, pasta and of course some Dean Martin - what else is
there?
Each year around February
when the grapes from
a local organic grower are ready, the community gather to make red wine.
The grapes are destalked and
placed into two 1000 litres primary fermentation vats for approximately 4 to
7 days.
Once the primary
fermentation process reaches a specific point the wine is then transferred from the vats
into glass demijohns. This wine will be racked at least once through the
winter where it will be finally bottled in November.
"Shareholders" in the Wine Making have purchased
all the required equipment. The cost per bottle for shareholders in the
first year was fairly high to cover the cost of the equipment. Shareholders
pay a lower price in subsequent years. Non-shareholders pay the same price
in the first and subsequent years but this is a higher price than the
shareholders. This model has enabled this community based enterprise to be
totally self funding within the first year. As additional funds are raised
from new shareholders additional equipment is purchased to expand and or
improve production. In 2005, 2 x 225 litre oak barrels were purchased as
well as specialised wine pumping equipment.
