Pasta Sauce Making at SomerVille
If you have not worked it out yet - we take good food pretty seriously at
SomerVille . Of course what is the perfect compliment to red wine? - pasta.
Hence pasta sauce making is now an annual tradition at SomerVille . You can
view photos of the process.
If you have seen the movie
"Looking for Alibrandi" - this is what sauce making days at SomerVille are
all about. Music, great smells, great sauce, great lunch, great people and
of course lots of fun!
Each year around February/March
when the tomatoes are ready, the community gathers to make the best,
sweetest pasta sauce ever produced!
Organic Roma tomatoes are
used - nothing but the absolute best.
The tomatoes rinsed, boiled and
then crushed through a 1 hp machine. After this they are poured into bottles.
A basil leaf is added. The bottles are
sealed with crown caps and boiled in large drums for over half an hour. The bottles are
allowed to cool over night.
Presto - ready to use!
The bottles will keep in a
cool dark cupboard for up to a year.
Bottles are recycled each year.
"Shareholders" in the Sauce Making have purchased
all the required equipment. The cost per bottle for shareholders in the
first year was fairly high to cover the cost of the equipment. Shareholders
pay a lower price in subsequent years. Non-shareholders pay the same price
in the first and subsequent years but this is a higher price than the
shareholders.
